Ingredients

  • 1 Tomahawk steak of 2-3 pounds
  • 4 tbsp Olive Oil
  • 2 tbsp Kosher Salt
  • 2 tbsp ground black pepper
  • 1 tbsp paprika
  • 1/2 tbsp cayenne powder
  • 5 tbsp onion powder
  • 5 tbsp garlic powder
  • 1 tbsp ground mustard
  • 1 Sprig fresh rosemary

Step 1: Prepare The Steak

If your tomahawk steak is preserved in the refrigerator, then 30 minutes before cooking remove it from the fridge. Thaw it at room temperature, so it’ll be cooked properly. Don’t skip the thawing process, otherwise, your steak won’t be cooked deliciously. Then, pat dry the steak with a paper towel to remove any excess water, so it can be seared well.

Step 2: Preheat The Pellet Grill

Select your wood pellet and fill the pellet hopper or smoking tube with it. Try using oak or hickory for better flavor. Preheat the pellet grill to 225°F (107°C) to get the cooking started.

Step 3: Season The Steak

In the third step, Brush the top and bottom of the steak with olive oil for binding. Now, in a small bowl, mix all the salt, paprika, black pepper, onion and garlic powder, ground mustard, and cayenne powder. Then, generously season the steak and rub it on the meat very well. Set it aside until the pellet grill is preheated.

Step 4: Grilling Time!

Before grilling, insert a meat thermometer probe in the deep side of the steak avoiding the bone area. Now, when the grill is preheated, place the tomahawk steak on the grill away from the direct heat source. Close the grill lid and cook it at 225°F(107°C) for 1 hour. When the internal temperature reaches 120°F(48°C) remove the steak from the grill.

Step 5: Sear The Steak

In an iron skillet, melt a small amount of butter first. Throw 3-4 garlic cloves and a fresh rosemary spring, then toss your steak in the skillet. Sear it in high heat and flip it on both sides. Don’t forget to sear the edge sides too. This step creates a beautiful crust and fabulously enhances the flavor! When the internal temperature reaches 145°F(Medium), remove it from the skillet.

Step 6: Give It A Rest

Lastly, before cutting it, give it a rest for 10-15 minutes to be compatible with room temperature. It’ll also allow the juice to be distributed throughout the meat. Then, cut it into pieces.
